Ginger Cake

Delicious and moist ginger cake


375g Plain flour
1 tablespoon ground cinnamon
2 teaspoons Bicarbonate of soda
1/2 teaspoon ground cloves
1 teaspoon ground ginger
1/2 teaspoon salt
300g Caster Sugar
250ml Yallo Cold Pressed Rapeseed Oil
250ml Treacle
125ml Apple juice
2 eggs
1 jar stem ginger in syrup – grated

Preheat oven to 180C or Gas mark 4

Oil and flour a loaf tin (or use a loaf liner)
Stir together flour, cinnamon, ginger, bicarbonate of Soda, salt, ground cloves.
In a large bowl whisk eggs, sugar, oil, juice, treacle and grated ginger.
Sieve flour and spices into mixture and put in loaf tin.
Bake for 1 hour 20 minutes
